“A mmugliulata” is a dish prepared with durum wheat flavour, filler paste, sourdough or brewer's yeast, cauliflower, pork, pecorino cheese and extra virgin olive oil.
It has circular or elongated shape.
For its preparation, we proceed by kneading the durum wheat flavour with warm water, salt and yeast. Once we have obtained a firm and elastic dough, we prepare round loaves (weighing approximately 100 grams) and left to rise covered with a cloth or a wool blanket.
During the leavening time (about 2 hours), we reccomend to chop the cauliflowers with a special knife, and let them rest.
Once leavening is completed, roll out the dough with a rolling pin until you obtain a disc with a dough thickness of no more than 3 mm.
After flannening the dough, the chopped and squeezed cauliflower is evenly distributed on it to free it from the water, and add the pork (previously salted and prepared), chopped or diced about 1 cm distributed like leopard spots.
At the end, it is sprinkled with grated Sicilian pecorino cheese , seasoned with plenty olive oil and rolled to form a flattened tube about 9 cm wide, from which to cut pieces 15 cm long, which can possibly twisted to obtain the typical circular shape.
For baking, place in a pan greased with olive oil and cook at a temperature of 220 degrees for about 45 minutes.
It is reccomended to eat them warm or cold.
